The Farm
Rancho Santana is home to a growing garden and farm, which provides the freshest ingredients for all of the casual and fine-dining venues at the ranch. The garden team picks and walks produce to the kitchen each morning.
Our resident farmer has started a program to raise grains, fowl and livestock. This will provide our guests with the most local milk, eggs and meats possible- from our own property!
We bake breads on site, like garden oregano focaccia, and wheels are in motion for homemade cheeses and cured meats. Our garden produce is highlighted not only in our daily food menu, but in our original cocktails, like the bell pepper infused rum and fresh ginger syrup used to create a refreshing El Comediante.
Items that are not grown on site are sourced from local providers and kept fresh until cooked.
The Sea
La Finca y el Mar buys fish and lobster from along its coastline. Rancho Santana is located in between two fishing villages, El Astillero and Pie de Gigante. Also, fisherman cast from the rocks on the nearby beaches. We source our seafood from all of these places, as well as shrimp from Sahlman Seafoods in nearby Chinandega.
The fresh fish varies seasonally and often daily, depending on what fish takes the bait.
Not only do we serve up killer fresh fish tacos, specific fish lend themselves to varied cooking techniques and are offered in specials that range from a crudo platter to a more hearty, slow-poached butter preparation.
If you look carefully, lobster buoys and fishing boats can be seen in the distance from our restaurant’s terrace on a daily basis.
