Where there’s smoke, there’s fire – and, in Chef Angie Mar’s case, an incredible plate not far behind.
Surprising to some is that the porcelain-skinned and pint-sized beauty is best known for her butchery and wood fire grilling. That said, her excitement to experiment with the ranch’s locally sourced produced proteins and seafood, their very own organic garden and world-class kitchens should come as no surprise at all.
And while this won’t be a “bare all” story, we can tell you a little bit about what Mar has in store for her guests over the holiday weekend.
For Thursday evening, Chef is envisioning a casual whole pig roast at The Beach & Surf Club at Playa Los Perros, one of four dining options amidst the ranch’s five beaches. Mar plans to take full advantage of a large open-air wood-burning grill built of local stone and boulders just steps off of the sand and surf. You could see anything from burgers to spitfire roasts with accompaniments and garnishes of fresh fruits, herbs and veggies straight from the property’s organic garden.
On Friday, guests that have purchased the “all-access” pass will be given the chance to learn a few of Mar’s moves in the kitchen while she hosts a butchering demonstration at The Pool House at Playa Rosada. Her students will enjoy a cocktail concocted with smoked honey to compliment the weekend’s theme while taking in each step of prep mastery.
Saturday night will be hosted at La Finca y el Mar, a farm to table concept executed with unparalleled integrity using entirely locally sourced ingredients, either from the property’s own resources or neighboring fisherman and farms. The dining room which is set in the main Clubhouse at Playa Santana offers a more sophisticated rendition of seaside dining, which Chef plans to use to inspire a five course tasting menu with wine pairings.
All Sundays should be a little “slow and low,” so guests will round out the weekend with a leisurely brunch in the Clubhouse. She’s got a few ideas cooking, but is leaving room to allow for the experiences of her first visit to Nicaragua to be put to good use for this finale feast.
